@امة_معدة_بالطلب_Some homes say sellou, others say zmita, and in some families each name has its own mix. There's no single answer for all of Morocco: ask the cook what she means by the name. And if you'd like it ready-made, cooks in your city are close by.
When you hear sellou or zmita
The same name doesn't always mean the same recipe from one region to the next. Ask your mother or grandmother what it was called at home. And don't be surprised if the neighbours have a different name and a different mix.
In the kitchen
For many people, sellou means making it together: everyone prepares something, and one pair of hands mixes it all. Every home leaves its mark on the taste and the texture. There's no single ingredient list for every sellou, so let the cook explain how she makes hers.
Depending on the family and region
Zmita also goes by different names and is made in different ways. Some families make it from what's already in the pantry; others make it for particular occasions. Your family's story matters, but it isn't a rule for all of Morocco.
When you compare them
Looking for the taste you grew up with? Choose the name and recipe closest to it. Discovering it for the first time? Ask the cook what goes in, how it's served and what makes her version different.
Before ordering
Look at photos of her own work, then ask about ingredients, quantity, presentation, price, packaging and delivery day. If someone at home needs to avoid an ingredient, say so from the start.
A good place to start
Every home has its own name and recipe. Find someone nearby who makes sellou or zmita, with photos of their work and a clear agreement.

Some foods live under more than one name. The name changes with the region, the mix changes with the home, and every family has its story: who used to make it, when it was served, and who went back for a third helping.
We won't say sellou has a single origin, or that zmita has one fixed definition. What we do know: the recipe passes from hand to hand, and every home adds a little of its own.
For the Eid tray, read Moroccan Eid sweets: ghriba or fekkas?. For a simple welcome, try dates with milk or walnut-stuffed dates.
On Hdaya you'll find home cooks and cooperatives who make sellou and zmita, with real photos of their work. Pick someone close to you and ask how she makes it before you order.
Not always. Names, mixes and ways of serving change from home to home and region to region. Ask the cook what she means by the name.
The one that takes you back to the taste of home. There's no winner: compare ingredients and method, and give each its place on the tray.
There's no one answer for everyone. Ingredients and quantities vary from one mix to another. If you have a health condition, ask your doctor what suits you.
Ask the cook what she calls it, what goes in, how it's served, and for photos of her work. Then agree on quantity, price, packaging and delivery day.
Procedures change. If something here is out of date, tell us and we will check it again.
